Prøv at starte bash vha:

bash -x

smart

så kan du se, hvad der går galt:

ja, jeg bliver klogere, men ...

Du skal lave EXCL vha:

EXCL="--exclude *~"

så virker det:

bash-3.1$ EXCL="--exclude *~"
+ EXCL='--exclude *~'

ikke hos mig:

sslug@sslug EXCL="--exclude *~"
+ EXCL=--exclude *~

( jeg får altså ikke ' omkring udtrykket som du, og derfor expanderer *~ til filnavne når jeg dernæst: )

tar cvf test.tar $EXCL testdir/
+ tar cvf test.tar --exclude slettemp~ testdir/

( slettemp~ er en fil i det dir hvor jeg står )
